Abstract

본 발명은, 쌀을 일정시간 침지, 탈수 한후 끓는 물 중에서 취사된 밥을 알파(α)화로 고정하여 진공건조함으로써 뜨거운 물을 재수화시 수분 흡수가 용이하게 간편하게 취식할 수 있는 알파미의 제조방법에 관한 것이다.

Claims (1)

  1. 하기 (가)내지 (마)의 공정으로 이루어지는 알파 건조미의 제조방법.
    (가) 도정된 쌀의 피막에 묻은 이물질을 깨끗이 세척하는 공정.
    (나) 세척된 쌀을 2시간 내지 4시간 물에 침지하여 쌀 내부까지 수분을 고루 함유시키고 30분 내지 2시간 동안 자연 탈수하는 공정.
    (다) 끓는 물 98내지 100℃에, 상기 물에 불린 쌀을 순간적으로 넣고 물의 온도가 98내지 100℃가 되도록 유지하면서 10~15분간 가열하여 밥을 짓는 공정.
    (라) 가열처리된 밥을 냉수로 살수하여 급냉시키는 공정.
    (마) 감압 진공건조기 내부온도를 80내지 90℃유지한 상태에서 밥을 넣고 순간 감압에 의하여 1Torr 이하의 진공하에서 수분함량이 1~8중량%가 되도록 건조 하는 공정.
