Abstract

PURPOSE: To prepare an unpolished rice which is readily cookable in the same operation as for the polished rice, by heating the unpolished rice with superheated steam, and expanding the rice to give a specified apparent specific gravity.
CONSTITUTION: An unpolished rice is directly or washed with water, heated with superheated steam and expanded to give a specified apparent specific gravity of 0.5W0.75. The operation may be carried out at normal or higher pressure. In the case of the normal pressure, the rice is brought into contact with superheated steam at about 150W250°C and heated. In the case of a higher pressure, the rice is heated at a temperature of about 130W250°C under a pressure of 1W3.5kg/cm2.G and released to a lower pressure rapidly and expanded.
