Mutant-enzym som oppviser redusert stabilitet under industrielle anvendelsesbetingelser, f.eks. en mutant bakteriell a-amylase som har redusert termostabilitet under bakebetingelser. Denne modifiserte a-amylase kan passende anvendes for forbedring av både brodvolum og smulemykhet hos brødprodukter uten at det forårsaker noen fare for overdekstrinering.
