Abstract
Un aislado de proteina canola que tiene un contenido proteinico de al menos aproximadamente 90% en peso (Nx 6.25) se emplea como un reemplazo al menos parcial para al menos un componente que proporciona funcionalidad en una composicion alimenticia. El aislado de proteina canola es una combinacion del aislado de proteina canola en la forma de una masa proteinica amorfa formada al sedimentar la fase solida de una dispersion de micelas proteinicas y al mezclar la masa amorfa con el sobrenadante concentrado proveniente del paso de sedimentacion proveniente del paso de sedimentacion y al deshidratar la mezcla.
