Abstract
"COMPOSIçãO ALIMENTìCIA QUE COMPREENDE UM ISOLADO DE PROTEìNA DE CANOLA". Trata-se de um isolado de proteína de canola que possui um teor protéico de pelo menos cerca de 90% em peso (N x 6,25), que é empregado como pelo menos uma substituição parcial para pelo menos um componente que proporciona funcionalidade na composição alimentícia. O isolado de proteína de canola consiste de uma homogeneização de isolado de proteína de canola na forma de uma massa de proteína amorfa formada pelo assentamento da fase sólida de uma dispersão de micelas de proteína e pela misturação da massa amorfa com o supernadante concentrado a partir da etapa de assentamento e a secagem da mistura.
