Abstract
Composiciones conservadoras que utilizan ingredientes GRAS (generalmente reconocidos como seguros) se incorporan en un proceso de conservacion de tres etapas comercialmente viable para hongos. El proceso incluye contactar los hongos con una solucion de pH elevado para reduccion microbiana; una etapa de neutralizacion para regresar el pH de los hongos a su pH aproximadamente fisiologico; y una etapa de anti- tostado que incorpora antioxidantes adecuados y compuestos auxiliares para mantener el color del producto terminado. Se describe especificamente un metodo para conservar hongos frescos que comprende las etapas de exponer los hongos a una solucion anti-microbiana acuosa con un pH de 10.5-1 1.5; tratar los hongos con un regulador neutralizante de pH que consiste de un acido organico y una sal de un acido organico y despues someter los hongos a una combinacion de un agente de anti- tostado, una fuente de calcio y un agente quelante.
