Abstract

Esta invencion está dirigida hacia un método para la formacion de alimento microencapsulado o cápsulas de saborizante así como las cápsulas producidas por el método. El método incluye proveer partículas de alimento o saborizante que serán encapsuladas, formando una mezcla de una gelatina de pescado de agua templada y las partículas de alimento saborizante, en un medio acuoso. El método incluye además el microencapsulado de las partículas con la gelatina a una temperatura elevada, mediante la coacervacion del complejo, para formar los microencapsulados. Si se desea, el método puede además incluir el paso de separar las cápsulas. En una forma preferida, el método se conduce a una temperatura de aproximadamente 33 degree C a aproximadamente 35 degree C. Preferentemente, la gelatina de pescado de agua templada, utilizada en el método de encapsulado, tiene una calificacion Bloom de desde aproximadamente 150 hasta aproximadamente 300 gramos Bloom, más preferentemente desde aproximadamente 250 hasta aproximadamente 300 gramos Bloom. Pueden utilizarse mucho tipos diferentes de partículas de alimento o de saborizante, tales como por ejemplo: aceite vegetal, aceite de limon, saborizante de ajo, saborizante de manzana o pimienta negra.
