Abstract

El invento se refiere a un método para enfriar una solucion acuosa de aspartamo y cristalizar el aspartamo desde ésta con evitacion de turbulencia en el sistema acuoso de cristalizacion, (i) alimentando una solucion acuosa caliente de aspartamo a unos metros para dispersar gotitas; (ii) dispersando éstas en un líquido inmiscible con agua a una temperatura menor de al menos 20 degree C, de manera tal que no se producirá nucleacion en las gotitas mientras que éstas estén pasando por dicho líquido inmiscible con agua; (iii) enfriar dicho líquido inmiscible con agua de manera tal que dichas gotitas sean enfriadas eficazmente para alcanzar una sobresaturacion relativa inicial de éster metílico de a-L-aspartil-L-fenilalanina dentro de las gotitas en el margen de 1 a 6, preferiblemente de 1,2 a 4; (iv) recoger las gotitas enfriadas para dar aspartamo cristalino; (v) y proporcionar tiempo suficiente para ello.
