Abstract

Esta invención se refiere a un procedimiento para la cristalización de aspartama (aspartamo) por neutralización con una base de una solución acuosa de aspartama, que tiene un pH inferior a 3, y homogeneización de la solución mediante convección forzada, caracterizado porque la solución se neutraliza y homogeneiza de manera tal que la solución obtenida es sustancialmente homogénea y tiene un pH superior a 3, dejando de agitar mecánicamente la solución por lo menos desde el inicio del último segundo antes de que la cristalización sea visualmente perceptible.
