Abstract
Métodos de tratamiento de alimentos líquidos, semilíquidos y sólidos para hacerlos más seguros de comer y/o para mejorar la calidad de conservación del producto. Entre las etapas que pueden ser empleadas se encuentran: el uso de una forma biocidamente activa de oxígeno para reducir la población de microbios naturales, la remoción del alimento de gases naturales que puedan causar descomposición, el reemplazo de gases eliminados del producto con gases que son químicamente inertes o biológicamente estériles o ambos; y el ascéptico del producto tratado. Las etapas del proceso seleccionado son llevadas a cabo por un tiempo suficiente para facilitar la producción de alimentos sustancialmente más seguros y más naturales que aquellos que pueden ser obtenidos si se emplean métodos tradicionales de pasteurización.
