Abstract

La presente invención se refiere a un método para separar las proteínas de una mezcla de huevo, caracterizado porque comprende: (a) obtener una mezcla de huevo que comprende lípidos de yema de huevo y proteínas huevo blanco; y (b) microfiltración de la mezcla de huevo para obtener una composición de proteína aislada, en donde la mezcla de huevo está sustancialmente libre de reactivo de reticulación de lípidos de huevo y en donde la microfiltración comprende bombear la mezcla de huevo a través de un filtro de fibras huecas con un tamaño de poro de menos de 0.20 micrones.
