Description

Claims (33)
- 卵混合物からタンパク質を分離するための方法であって、
(a)卵由来脂質及び卵由来タンパク質を含む卵混合物を得ることと、
(b)前記卵混合物をマイクロ濾過して、単離されたタンパク質組成物を得ることと
を含む、方法。 - 前記卵混合物が少なくとも1パーセントの卵由来脂質を含む、請求項1又は3〜14のいずれか一項に記載の、卵混合物からタンパク質を分離するための方法。
- 前記卵混合物が少なくとも5パーセントの卵由来脂質を含む、請求項1、2又は4〜14のいずれか一項に記載の、卵混合物からタンパク質を分離するための方法。
- 前記卵混合物が少なくとも25パーセントの卵由来脂質を含む、請求項1〜3又は5〜14のいずれか一項に記載の、卵混合物からタンパク質を分離するための方法。
- マイクロ濾過が、0.20マイクロメートル未満の孔径を有する中空繊維フィルターを横切って、前記卵混合物を約60PSI未満の圧力で揚送することを含む、請求項1〜4又は6〜14のいずれか一項に記載の方法。
- マイクロ濾過が、0.10マイクロメートル未満の孔径を有する中空繊維フィルターを横切って、前記卵混合物を約30PSI未満の圧力で揚送することを含む、請求項1〜5又は7〜14のいずれか一項に記載の方法。
- 前記中空繊維膜が親水性材料から構成されている、請求項1〜6又は8〜14のいずれか一項に記載の方法。
- 前記中空繊維膜がポリエステルスルホン(PES)を含む、請求項1〜7又は9〜14のいずれか一項に記載の方法。
- 螺旋状巻回膜モジュールを横切って、前記卵混合物を揚送することを含む、請求項1〜8又は10〜14のいずれか一項に記載の方法。
- 前記膜がポリフッ化ビニリデンを含む、請求項1〜9又は11〜14のいずれか一項に記載の方法。
- 前記膜が、0.2マイクロメートル未満の孔径を有する、請求項1〜10又は12〜14のいずれか一項に記載の方法。
- 前記卵混合物が非食用卵を含む、請求項1〜11又は13、14のいずれか一項に記載の方法。
- 前記卵混合物が食用卵を含む、請求項1〜12又は14のいずれか一項に記載の方法。
- 前記卵混合物が、加工前に、乾燥重量に基づいて、約40%〜80%のタンパク質と約35%〜15%の脂肪とを含む、請求項1〜13のいずれか一項に記載の方法。
- 卵混合物からタンパク質を分離するための方法であって、
(a)卵黄脂質、卵黄タンパク質、及び卵アルブメンを含む卵混合物を得ることと、
(b)卵黄脂質、卵黄タンパク質、及び卵アルブメンを含む前記卵混合物をマイクロ濾過して、卵黄由来タンパク質及び卵アルブメン由来タンパク質を含む単離されたタンパク質組成物を得ることと
を含む、方法。 - 前記卵混合物が少なくとも1パーセントの卵黄由来脂質を含む、請求項15又は請求項17に記載の、卵混合物からタンパク質を分離するための方法。
- 前記卵混合物が少なくとも5パーセントの卵黄由来脂質を含む、請求項15又は請求項16に記載の、卵混合物からタンパク質を分離するための方法。
- 卵混合物からタンパク質及び脂質を分離するための方法であって、
(a)卵黄脂質及び卵黄タンパク質を含む卵混合物を得ることと、
(b)前記卵混合物をマイクロ濾過して、前記卵黄タンパク質から前記卵黄脂質を分離することと
を含む、方法。 - 前記卵混合物が少なくとも1パーセントの卵黄由来脂質を含む、請求項18に記載の、卵混合物からタンパク質を分離するための方法。
- 卵混合物からタンパク質を分離するための方法であって、
(a)卵黄及び卵アルブメンを含む卵混合物を得ることと、
(b)前記卵黄及び卵アルブメンのpHを約4〜約8の範囲内に維持することと、
(c)卵黄脂質、卵黄タンパク質、及び卵アルブメンを含む前記卵混合物をマイクロ濾過して、卵黄由来タンパク質及び卵アルブメン由来タンパク質を含む単離されたタンパク質組成物を得ることと
を含む、方法。 - 前記卵混合物が非食用卵を含む、請求項20又は21〜25のいずれか一項に記載の方法。
- 前記卵混合物が食用卵を含む、請求項20、21又は23〜25のいずれか一項に記載の方法。
- 前記卵混合物が、加工前に、乾燥重量に基づいて、約40%〜80%のタンパク質と約35%〜15%の脂肪とを含む、請求項20〜22又は24、25のいずれか一項に記載の方法。
- 前記卵黄由来タンパク質がIgYを含む、請求項20〜23及び25のいずれか一項に記載の方法。
- 前記卵黄由来タンパク質がオボトランスフェリンを含む、請求項20〜24のいずれか一項に記載の方法。
- 卵混合物からタンパク質を分離するための方法であって、
(a)卵黄及び卵アルブメンを含む卵混合物を得ることと、
(b)卵黄脂質の脂質を、実質的に非架橋形態に維持することと、
(c)卵黄脂質、卵黄タンパク質、及び卵アルブメンを含む前記卵混合物をマイクロ濾過して、卵黄由来タンパク質及び卵アルブメン由来タンパク質を含む単離されたタンパク質組成物を得ることと
を含む、方法。 - 前記卵混合物が、加工前に、乾燥重量に基づいて、約40%〜80%のタンパク質と約35%〜15%の脂肪とを含む、請求項26に記載の方法。
- 卵黄及び卵アルブメンから得た卵粉末であって、
(a)乾燥重量に基づいて少なくとも約60%のタンパク質と、
(b)乾燥重量に基づいて約2%未満の脂肪と、を含み、
前記タンパク質の少なくとも一部が、卵黄脂質及び卵黄タンパク質の濾過により誘導される、卵粉末。 - 高いゲル強度を有する卵粉末であって、
(a)少なくとも約60重量%のタンパク質と、
(b)約1重量%以下の脂肪と、
(c)少なくとも400のゲル強度と、を含み、
前記タンパク質の少なくとも一部が、卵黄脂質及び卵黄タンパク質の混合物の濾過により誘導される、高いゲル強度を有する卵粉末。 - 前記タンパク質が、卵黄由来タンパク質及びアルブメン由来タンパク質を含む、請求項29又は31〜33のいずれか一項に記載の、高いゲル強度を有する非食用卵粉末。
- 前記卵粉末が少なくとも70重量%のタンパク質を含む、請求項29、30又は32、33のいずれか一項に記載の、高いゲル強度を有する非食用卵粉末。
- 前記卵粉末がIgYを含む、請求項29〜31又は33のいずれか一項に記載の、高いゲル強度を有する非食用卵粉末。
- 前記卵粉末がオボトランスフェリンを含む、請求項29〜32のいずれか一項に記載の、高いゲル強度を有する非食用卵粉末。
