Abstract
Se proporciona un producto de leche en polvo secado por aspersión electrostática con una composición superficial comprendiendo al menos 8% de grasa comparado con un polvo secado por aspersión del mismo producto de leche. Además se proporciona un método para proporcionar un producto de leche en polvo comprendiendo el secado por aspersión electrostática de un producto de leche en una temperatura de entrada por debajo de 150°C. El producto de leche en polvo secado por aspersión electrostática tiene una composición superficial con un contenido de grasa reducido y contenido de carbohidratos incrementado en relación con el mismo producto de leche en polvo preparado mediante secado por aspersión a alta temperatura.
