Abstract

Se divulga un proceso para aislar un componente de modificador de sabor útil para alimentos, bebidas y aplicaciones nutracéuticas y farmacéuticas. Una fruta pulverizada, o materia prima basada en vegetales se combina con un solvente comestible natural para producir una mezcla heterogénea. Una fase líquida aislada de la mezcla se pone en contacto con una resina acídica de intercambio de iones para aislar un componente de modificador de sabor básico. La resina se trata posteriormente con una solución acuosa diluida de un hidróxido metálico álcali para eluir el componente de modificador de sabor. El componente de modificador de sabor, el cual se activa adicionalmente por medio de un calentamiento medio, se combina con vitaminas, sabores y secada otros aditivos alimenticios se incorporan a las composiciones de modificador de sabor acuosas, basadas en aceite y en polvo que tienen una efectividad mejorada en comparación con los modificadores de sabor previamente conocidos.
