Abstract

Un proceso para preparar emulsión de agua en aceite la emulsión que comprende proteína, aceite y grasa ``hardstock´´. El proceso implica mezclar la grasa ``hardstock´´ fundida con una dispersión de agua continua que comprende proteína y aceite, en donde la temperatura de la dispersión acuosa que es mezclada con la grasa ``hardstock´´ fundida está abajo de 15°C, y la mezcla es realizada por un dispositivo de mezclado de alto esfuerzo cortante seguido por un agitador de pivote.
