Abstract

La invención se refiere a un concentrado salado que contiene: a) del 22 al 85% en peso de sal inorgánica; b) del 2 al 60% en peso de grasa; c) del 1,5 al 10% en peso de goma de heteropolisacárido seleccionada entre galactomanano, glucomanano y combinaciones de ellos; d) del 0 al 25% en peso de componente de glutamato; e) del 0 al 25% en peso de componente de almidón; f) del 0 al 20% en peso de azúcar; g) del 0 al 45% en peso de materia vegetal; h) del 0 al 10% en peso de agua; donde los componentes a) a e) conjuntamente constituyen al menos el 55% en peso del concentrado salado y donde los componentes a) a h) conjuntamente constituyen al menos el 75% en peso del concentrado salado. Este concentrado salado se puede emplear convenientemente en la preparación de un consomé, un caldo, una sopa, una salsa o un jugo de cocción, y no sólo imparte sabor y mejoramiento del sabor, sino que adicionalmente mejora la textura del producto final.
