Abstract

En la presente se describen procesos para la producción de productos lácteos cultivados, tales como yogur, que son estables en anaquel sin refrigeración. Estos procesos incluyen el contacto de una base esterilizada, de preferencia, una base esterilizada de leche de muy alta temperatura (UHT) que tiene de 0.5-1.9 % por peso de azúcar de leche con un cultivo de bacterias de ácido láctico y el envasado aséptico en un recipiente, seguido por el almacenamiento bajo condiciones adecuadas para originar un pH menor que 4.7. Otros ingredientes (tales como un endurecedor, un saborizantes, un preservativo, un estabilizador, un en dosificador, una sustancia prebiótica, una bacteria especial probiótica, una vitamina, un mineral, un ácido graso omega 3, un fitoesterol, un antioxidante, un colorante) podría ser agregados antes del envasado.
