Abstract

Se describe un método para la producción de triacilgliceroles a partir de gomas que han sido separadas de un producto oleoso. Las gomas son tratadas con una enzima que tiene actividad PLC, las cuales conducen a la formación de diacilgliceroles y fosfatos y se tratan con una enzima que tiene actividad PLA lo cual conduce a la formación de liso-fosfolípidos y ácidos grasos libres. Los diacilgliceroles y los ácidos grasos libres de estas dos reacciones diferentes entonces se combinan en presencia de las enzimas para producir moléculas de triacilglicerol novedosas. (Ver fórmulas).
