Abstract
Proceso para el desgomado de una composición de aceite que comprende poner en contacto dicha composición de aceite con una mezcla enzimática, que comprende una actividad fosfolipasa con especificidad por fosfatidilinositol; una actividad fosfolipasa específica de fosfatidilcolina y fosfatidiletanolamina; y una lípido aciltransferasa; donde la concentración de lisofosfolípidos y ácidos grasos libres se mantiene en sus niveles iniciales.
