Abstract
Productos que contienen jugos y/o extractos de plantas Brassicaceae son muy conocidos por su olor repugnante. Este olor es el resultado del sistema mirosinasa-glucosinolato hallado en la familia de plantas. La presente invención se refiere a productos de Brassica (en particular, pigmentos de repollo colorado) y proporciona tratamientos que usan enzima(s) y cromatografía para evitar o reducir significativamente la formación de malos olores.
