Abstract
La presente invención se refiere a método para fabricar un producto alimenticio, que comprende las etapas de: bombear un componente de rebanadas de carne a través de una sección de una cabeza de extrusión; y bombear una substancia grasa a través de otra sección de la cabeza de extrusión, de modo que salga un coextruído de carne y grasa en rebanada; y transportar el coextruído a través de un congelador alargado para endurecer en caja al mismo y posteriormente cortar el producto en tramos relativamente cortos, caracterizado en que el componente de carne en rebanadas está formado de rebanadas frías cortadas delgadas, típicamente de un área de entre 50 y 150 mm cuadrado, y en que las rebanadas, antes del bombeo, se agitan en mezcla con un adhesivo fluido a base de carne furante un período de tiempo corto para revestir las rebanadas con el adhesivo, pero no para descargar material de las rebanadas. Aparato para llevar a cabo el método para fabricar un producto alimenticio, caracterizado por elementos apra agitar rebanadas de carne con un adhesivo fluido, un conjunto de extrusión que comprende una cabeza de extrusión para descargar el coextruído y elementos para bombear las rebanadas revesstidas y un componente graso, respectivamente, a la cabeza de extrusión, un transportador hacia el que se descarga el extruído, un congelador alargado a través del cual viaja el extruído para endurecimiento en caja y, una cortadora para cortar el extruído endurecido en caja en tramos cortos.
