Abstract

La presente invención se refiere a un método para controlar el color de un substancia alimenticia suseptible a la decoloración, que consiste de combinar la substancia alimenticia con un àcido aldónico y sus lactonas, en una cantidad efectiva para controlar la decoloración de la substancia alimenticia y para disminuir el pH del equilibrio hasta 4.6 o menos, y procesar térmicamente la substancia alimenticia con el ácido aldónico y sus lactonas, a un parámetro de tiempo/temperatura, suficiente para lograr la esterilización comercial misma, para proporcionar una substancia alimenticia que es comercialmente estéril, cuyo pH de equilibrio es de 4.6 o menos, cuyo color se controla y cuyo sabor, debido a la presencia de las lactonas con el ácido aldónico, es menos acídico de lo que sería y el pH de equilibrio se redujera hasta 4.6 o menos, combinándose asimismo con un ácido sin lactonas.
