Abstract

The invention relates to the wine making industry. namely to one of the sparkling wines production processes.The technical result consists in increasing the sparkling and foaming properties, wine resistance to the CO2 excretion, for that decreasing the gas and wine losses.The process foresees blending of wine materials, the blend filtration, carbon dioxide aeration of it, bottling, corking and designing of bottles.The novelty of the process consists in the fact that after bottling the wines it is provided the aeration of them with carbon dioxide in two stages, in the first of which through the valve into the bottles is injected the carbon dioxide under pressure of 0,6-0,8 MPa, fixing the bottle with a blocking mechanism and in the second phase the gas-liquid is mixed at the medium excessive pressure of not less than 0,2 MPa, pouring the wine into the flask and back into the bottle by turning the aerator over with 180°.
