Abstract

The invention refers to the wine-making industry, especially, to processes for reducing the must or wine acidity. Summary of the invention consists in, that the proposed process comprises dividing of the must or wine into the deoxidizing and non-deoxidizing fractions, sulphitation of the non-deoxidizing fraction and treatment thereof with the pectolytic enzimes, addition thereof to the calcium carbonate, sediment separation and after mixing with the non-deoxidizing fraction it is maintained in the rest during 2...4 hours and treated with the bentonite. The technical result consists in pectin hydrolysis acceleration, reducing the calcium contents in the prepared product and quality improvement. Claims: 1
