Abstract

The invention relates to the wine and alcoholic beverage industry. Novelty consists in that after distillation the new wine distillate, the ethyl wine or fruit spirits are subjected to purification of heavy metals, radionuclides and toxic impurities, with the help of ion-exchange resins: cationite IR 120 or C 20 and anionite A 561 or Thermoxide 3A in doses of 1_3 g/dm3 in stationary conditions or in flux with the feed velocity 1_5 m3/h, and prior to maturation in oak casks or in enamel reservoirs on used staves, the said spirits are matured within 3 months in flux with recircullation, the velocity being 200_400 dal/h, in a close circuit constituted of heat exchanger, where the product is heated up to a temperature of 30+- 2 degree C, reactor with oak staves with the specific surface of the staves of 200_700 cm2/dm3, 50% of which are treated thermally and 50% conventionally and the oxygen is administered into the flow of the recirculating mixture through a titanic finely dispersed atomizer, once in 7 days, within 15 min, under a pressure of 5 kG/cm2 up to the oxygen concentration into the spirit of 20_25 mg/dm3.The result consists in accelerating the maturation process, in obtaining a high-grade, stable and ecologically pure finished product.Claims: 1
