Abstract

The invention refers to the wine industry, in particular to a process for wine distillate maturation.The process, according to the invention, provides for the maturation of the wine distillate in two stages. In the first stage the maturation is carried out in reservoirs on thermally treated oak staves with the specific surface of 100…200 cm2/dm3, during 3 months, with heating once a month of the distillate up to the temperature of 60…70°C and oxygen dosing in the quantity of 20…30 mg/dm3 after natural cooling of the distillate up to 15…20°C. In the second stage the maturation is carried out in reservoirs on hydrothermally treated oak staves with the specific surface of 100…200 cm2/dm3, during 3 months, with heating once a month of the distillate up to the temperature of 20…25°C and oxygen dosing in the quantity of 30…40 mg/dm3.Prior to maturation, optionally, it is carried out enrichment of the distillate preliminarily heated up to the temperature of 40…60°C with the components of the oak wood by thermal maceration on oak chips in the ratio of 2…5 g/dm3 during 2…3 days with mixing of 3…4 times a day.After the expiry of the period of maturation on hydrothermally treated oak staves the process is changed over the pulsating flow.
