Abstract

The invention refers to the wine industry, in particular to a process for wine distillate maturation.The process, according to the invention, includes maturation of the wine distillate in oak vessels or in the presence of oak staves with enrichment of the wine distillate with oak wood components by drawing thereof out of the vessels, thermal treatment in the presence of chopped oak wood and return into the vessels. At the same time, drawing of the wine distillate out of the vessels is carried out during the first year of maturation, 1…5 times, in the quantity of 0,2…1,0 parts of volume, and the thermal treatment is carried out at the temperature of 35…70°C during 10…30 days.The result consists in the intensification of the maturation processes and increase of the finished product quality.
