Abstract

Inventia se refera la industria alimentara, si anume la un procedeu de obtinere a legumelor cu umiditate intermediara. Procedeul de obtinere a legumelor cu umiditate intermediara include pregatirealegumelor, mentinerea lor in solutie apoasa de conservant, deshidratarea prin suflare cu aer si ambalarea ermetica. Noutatea inventiei consta in aceea ca in calitate de solutie apoasa de conservant se utilizeaza solutia ce contine sorbat de potasiu0,05%, benzoat de sodiu 0,06% si acid citric 2,0%, in care legumele se mentin timp de 5...7 min. Incalitate de legume se utilizeaza tomate si/sau ardei grasi rosii, si/sau vinete, si/sau ceapa.
