Abstract
Invenţia se referă la industria vinicolă, şi anume la un procedeu de fabricare a băuturilor tari maturate de tip brandy.Băutura de tip brandy conţine distilat de struguri învechit cel puţin 6 luni pe doagă de stejar tratată termic, sirop de zahăr, caramel, alcool etilic rectificat de purificare superioară, apă dedurizată, macerat de nucă în faza de lapte-ceară, învechit cel puţin 6 luni pe doagă de stejar tratată termic, componentele fiind luate în următorul raport, %:alcool etilic rectificat şi apă dedurizată restul, până la tăria de 40±0,3% vol.,totodată învechirea distilatului de struguri şi a maceratului de nucă se efectuează pe doagă de stejar tratată termic la diferite temperaturi: 45…50% la 115…125°C în decurs de 10…15 zile, 35…40% la 145…155°C în decurs de 8…12 ore, 10…15% la 160…165°C în decurs de 1…2 ore; maceratul de nucă se obţine prin macerarea fructelor în faza de lapte-ceară cu distilat de struguri în două etape: la prima etapă se efectuează macerarea în raport de 1:10, la a doua de 1:5.
