Abstract
Изобретение относится к способу, а также устройству для стабилизации формы изделий из теста, как длинных, так и мелких. К еще теплому изделию в конце сушки или климатической зоны 9 в элементе добавления воды (27) добавляют малое количество воды, например, 0,4-1,2% по поверхности, и затем изделие охлаждают в охладителе (29). В заключение изделия из теста выдерживают в подвешенном состоянии для стабилизации, поскольку это необходимо для заключительного процесса упаковки. Также при чрезвычайно суровых климатических условиях при сушке и коротком времени сушки таким образом можно избежать не объясненной до сих пор возникающей позже хрупкости изделий.Фигуры: 7
