Abstract

La presente invenzione riguarda un procedimento per l'essiccazione di pasta alimentare che prevede quattro fasi: a) incartamento o prima essiccazione, b) essiccazione, c) trattamento termico, d) raffreddamento, il procedimento compren-dendo, nell'ordine indicato, nella fase a) di incartamento o prima essiccazione, gli stadi di:1) preessiccazione,2) riscaldamento rapido,3) inattivazione enzimatica,nella fase b) di essiccazione, gli stadi di:4) seconda essiccazione,5) terza essiccazione,nella fase c) di trattamento termico, gli stadi di:6) stabilizzazione finale,7) umidificazione.Tale procedimento risulta particolarmente vantaggioso in quanto consente un miglioramento della qualit` di cottura della pasta, limitando nello stesso tempo il danno termico.1
