Abstract

Inventia se refera la industria alimentara, si anume la un procedeu de obtinere a desertului de fructe uscate cu miez de nuca. Procedeul propus include pregatirea fructelor, umplerea fructelor fara samburi cu miez de nuca, asezarea lor in ambalaj, turnarea si ermetizarea. Totodata fructele umplute cu miez de nuca se usuca pana la activitatea apei in ele de 0,6...0,7, turnarea se efectueaza cu miere de albine, iar raportul dintre fructele umplute cu miez de nuca si mierea de albine este de 1:(0,8 ... 1,9). In calitate de fructe se utilizeaza prune si/sau caise proaspete sau uscate. Miezul denuca in prealabil se sorteaza, se divizeaza in sferturi si se incalzeste la temperatura de 83...85°C, timp de 10...15 min. Inainte de asezare in ambalaj fructele uscate umplute cu miez de nuca se racesc si se taie de-a curmezisul.
