Abstract

Invenţia se referă la industria vinicolă, în particular la un procedeu de fabricare a vinurilor cu zahăr rezidual.Procedeul, conform invenţiei, include fabricarea vinului sec, refrigerarea rapidă la o temperatură de la - 10 până la -12°C cu o perioadă de criostatare în condiţii izotermice de 4...8 ore şi separarea ulterioară a gheţii formate în cantitate de 1/4. . . 2/3 de la volumul iniţial al vinului.Rezultatul constă în obţinerea vinurilor cu zahăr rezidual de calitate înaltă.
