Abstract

Invenţia se referă la industria vinicolă.Procedeul, conform invenţiei, include pasteurizarea vinului brut, prepararea amestecului fermentativ, fermentarea secundară, administrarea licorii de expediţie şi refrigerarea produsului finit. Totodată anterior administrării licorii 1/3 din volumul acesteia se tratează cu sorbent cu conţinut de cupru sau zinc, doza tratării constituind 0,8…1,1 g/dm3, se menţine în decurs de 3…5 zile cu decantare ulterioară şi se amestecă cu partea restantă. În continuare în licoare se introduce acid sorbic în doză de 150…200 mg/dm3 şi acid citric, raportul acizilor fiind de respectiv 1:0,6.Rezultatul constă în posibilitatea utilizării acidului sorbic în calitate de conservant pentru vinul spumant natural şi în obţinerea unui produs finit stabil.
