Invenţia se referă la industria alimentară, în particular la industria de cofetărie, şi anume la o compoziţie pentru fabricarea biscuiţilor cu valoare biologică ridicată. The invention relates to the food industry, in particular to the confectionery industry, namely to a composition for the manufacture of biscuits with high biological value.
Toate seminţele şi sâmburii din fructe, cu excepţia citricelor, conţin amigdalină, de unde şi gustul amărui specific. Sâmburii de fructe sunt o sursă importantă de proteine dietetice ce conţin o cantitate semnificativă de ulei şi fibre, prezentând o activitate antioxidantă mai mare, decât cea a fructelor. Pe lângă proteine conţin acizi graşi, vitaminele A şi C, grupul vitaminelor B, betacaroten, minerale - ca fierul sau magneziul. Datorită activităţii farmacologice a acestora, au fost utilizaţi în medicina tradiţională ca remediu pentru diferite afecţiuni. În compoziţia miezului sâmburilor de fructe se conţine vitamina B17, numită amigdalină, uşor izolată din miezul sâmburilor de caise, migdale, cireşe, piersici şi prune. The composition of the core of fruit pits contains vitamin B17, called amygdalin, easily isolated from the core of apricot, almond, cherry, peach and plum pits. Amygdalin has also been used to cure many other diseases, such as bronchial asthma, improving the immune system, apoptosis of renal fibroblasts, inhibiting hyperglycemia.

All these can be considered as disadvantages of this invention.

Dezavantajul acestora este conţinutul prea mare de făină din sâmburi de caise, în cantitate de 50% din masa totală a făinii de grâu. Astfel, sortimentul propus de biscuiţi poate fi considerat ca produs de cofetărie funcţional, cu scop profilactic. • dozarea şi amestecarea componentelor; • dosing and mixing of components;
• obţinerea masei spumoase şi omogenizarea; • obtaining the foamy mass and homogenizing it;
• adăugarea în trei etape a amestecului de făină de grâu, făină din seminţe de fructe sau din miez de sâmburi de fructe şi bicarbonat de sodiu; • adding in three stages the mixture of wheat flour, fruit seed flour or fruit pit flour and baking soda;
