Abstract
Изобретение относится к винодельческой промышленности, а именно к способу производства красного сухого вина с повышенным содержанием биологически активных веществ.Способ, согласно изобретению, включает обработку винограда холодом при температуре -5…0°C в течение 12…24 часов, дробление и гребнеотделение винограда с получением мезги, удаление из нее части сусла в количестве 2...10 %, брожение-настаивание мезги в течение 5…10 дней с периодическим перемешиванием, после чего следует отделение, дображивание и осветление молодого вина. При этом используется виноград с содержанием сахаров не менее 22%, с высоким технологическим запасом фенольных и красящих веществ, а также с большим содержанием семян.
