Abstract

Invenţia se referă la domeniul industriei alimentare, şi anume la metoda de fabricare a dulceţii.Fructele se triază conform calităţii, gradului de coacere, dimensiunilor şi se spală.În continuare, fructele uscate prin metoda sublimării se încarcă în aparatul vacuum cu rarefiere, în care se aduce sirop de zahăr cu o concentraţie de 68-73%, la temperatura de 70-80°C.Fructele se ţin în sirop 10-15 min., se ambalează şi se închid ermetic.Fructele în dulceaţă constituie 44-55% din masa netto. Cota masei substanţelor uscate în dulceaţa dată constituie 71-73%.Obţinută într-un astfel de mod, dulceaţa se caracterizează prin calitate înaltă. Având în vedere că în proces practic lipseşte prelucrarea termică a fructelor, se păstrează la maximum gustul lor iniţial, culoarea, aroma şi forma. Nu se distrug vitaminele. Fiind de o calitate înaltă şi posedând un aspect admirabil, produsul va fi competitiv pe piaţa mondială.
