Abstract

Invenţia se referă la industria alimentară, şi anume la gemurile cu conţinut redus de zahăr.Gemul conţine materie primă vegetală, zahăr, pectină, acid ascorbic, apă şi opţional acid citric şi conservant, în următorul raport al componentelor, în % de masă:totodată în calitate de conservant se utilizează sorbat de potasiu.Rezultatul constă în obţinerea unui gem cu valoare biologică sporită cu conţinut redus de zahăr, îmbogăţit cu acid ascorbic.
