Pizzateig wird in übl icher Weise hergestellt, geformt und gegebenenfal 1 s mit Tomatenmark, Käse u.dgl. teilbelegt. Danach erfolgt ein Vorbacken in einem ersten Ofen, der auch Teil ei nes mehrteiligen Ofens sein kann. Sodann erfolgt vorzugsweise in einem zweiten Ofen oder Ofenteil ein Grillen des Teiges, wobei die Grillwärme von unten auf den Teig gerichtet wird und die Pizzenmit Hilfe hitze-durchlässiger Beförderungsmittel wie Stahlbän-der, Stahlgewebe u.dgl. durch diesen zweiten Ofen geführt werden.
