Abstract

본 발명은 「소맥 배아」나 이를 포함한 「밀기울」을 첨가한 키틴질의 숙성 토하젓 제조 방법이다.
이 주 원료인 살아 있는 생토하(生土鰕: 새뱅이: Caridina denticulata denticulata DEHAAN)의 식염 수용액에 「소맥 배아」나 「밀기울」을 숙성 강화제로 첨가하여 숙성시킨 키틴질의 숙성 토하젓 제조 방법에 관한 것이다.
이 숙성 토하젓의 성분중에는 일반 토하젓과는 달리 토하 껍질의 숙성이 보다 더 잘되어 토하 껍질을 구성한 키틴(chitin)이 쉽게 가수분해되어 그 생성물이 포함되어 있다. 이 생성물은 키틴올리고당(chitin oligosaccharides)으로 이에 속하는 면역 활력형의 제암성 물질인(GICNAC)6을 비롯하여 비교적 다량의 생리 기능성 물질이 포함되어 있는 효과와 특징이 있다.

Claims (2)

  1. 살아 있는 토하(土鰕: 새뱅이: Caridina denticulata denticulata DEHAAN)를 주원료로한 염장 토하에 소맥 배아(小麥胚芽:밀씨눈)를 숙성강화제로 첨가하여 숙성시킨 키틴질의 숙성 토하젓 제조 방법.
  2. 위의 제1항에 있어서 소맥배아(小麥胚芽) 대신 이를 포함한 밀기울을 숙성강화제로 첨가하여 숙성시킨 키틴질의 숙성 토하젓 제조 방법.
