제2도는 제1도에서 예증된 방법에 사용할 수 있는 미소망상조직 미결정성 셀룰로스 수성분산액의 제조를 위한 연속 교반 탱크 반응기형의 다중 통과 연속 방법의 특별한 실시양태를 예증하는 개략도이다. 및
제3도는 제1도의 방법에서의 사용을 위한 연마된 탈지유 치즈를 제공하기 위한 연마 공정 및 자연탈지유 치즈 제조를 예증하는 개략도이다.

Claims (2)
- 물 약 50 내지 30 중량%. 지방 약 1.67 중랑% 이하 및 비지방 고형분 약 40 내지 30 중량%로 구성되는 분쇄된 자연 탈지유 치즈, 비지방 낙농 고형분, 미소망상조직 미결정성 셀룰로스 고형분 약 3 내지 약 12 중량%를 포함하는 다공성 미립 미소망상조직 미결정성 셀룰로스의 수성 슬러티, 15-20DE 옥수수 시럽 고형분, 음이온계 친수성 검 성분, 유제 염, 및 티타늄 디옥사이드 난백제의 블렌딩으로 실질적으로 지방이 없는 치즈 블렌드를 제공하고, 치즈 블렌드의 총 중량을 기준으로, 약 3 내지 약 17 중량% 범위내의 수증기를 치즈블렌드내로 주입시켜, 혼합과 함께 약165°F 내지 약 270°F의 범위내의 가공온도로 치즈 블렌드를 가열하여. 실질적으로 균질한 유체화 치즈 용융물을 제공하고, 실질적으로 균질한 유체화된 치즈 용융물을 상기 높은 가공온도에서, 220°F로 적어도 약 85초 또는 동등한 시간-온도 관계를 유지하여 고온 가공 치즈 용융들을 제공하고, 수은주 30inch 이하의 압력에서 유지되는 진공 구역으로 치즈 용융물을 보내서 장기간-보유된 치즈를 급냉각하여 약 140 내지 약 170°F의 범위의 온도로 치즈 용융물을 냉각시키고, 및 급냉각 치즈 용융물을 포장하여 원하는 지방-모방 특성 및 지방 1.67 중량% 이하를 갖는 포장된, 실질적으로 지방이 없는 가공 치즈 제품을 제공하는 것으로 구성되는 실질적으로 지방이 없는 치즈 제품 제조 방법.
