제1도는 0.015%의 타우마틴을 함유하는 여러가지 다른 형태의 껌 조성물에 대한 단맛 정도를 나타낸다.
Claims (21)
- 식용 조성물의 풍미와 단맛을 증진시키기 위해 첨가하는 A) 분말 형태의 풍미 조성물; 및 B) 상기 풍미 조성물을 캡슐로 싸기 위한 지방, 왁스 및 이들 혼합물로 구성된 그룹으로부터 선택된 소수성물질, 타우마틴, 모넬린, 디하이드로칼콘 및 이들의 혼합물로 구성된 그룹으로부터 선택된 풍미/단맛 증진제로 구성된 메트릭스로 이루어진 자유롭게 유동할 수 잇는 미립자 도출시스템.
- 제1항에 있어서, 분말 형태의 풍미 조성물이 분무 건조된 천연 또는 인공 향미료 또는 엣센스인 도출 시스템
- 제2항에 있어서, 분무건조된 향미료가 스피아민트 향미료, 페파민트 향미료, 계피 향미료, 과일 향미료, 과일 엣센스, 콜라(kola) 향미료, 콜라 추출물 및 이들의 혼합물로 구성된 그룹으로부터 선택된 도출시스템.
- 제1항에 있어서, 향미료 조성물이 약 5-약 50wt% 존재하는 도출시스템.
- 제1항에 있어서, 향미료 조성물이 약 20-약 30wt% 존재하는 도출시스템.
- 제1항에 있어서, 풍미/단맛 증진제가 약 1-약 20wt% 존재하고 소수성 물질이 약 10-약 70wt% 존재하는 도출시스템.
- 제1항에 있어서, 풍미 증진제가 풍미 뿐만아니라 단맛까지 증진되었다고 느낄 수 있기에 충분한 양 만큼 존재하는 도출 시스템.
- 제1항에 있어서, 소수성 지방 물질이 수소화 되거나 또는 부분적을 수소화된 오일로 구성된 그룹으로 부터 선택된 지방산인 도출시스템.
- 제8항에 있어서, 수소화되거나 또는 부분적으로 수소화된 오일이 팜오일, 팜인(仁)오일, 땅콩기름, 평지씨유, 쌀겨기름, 간장콩기름, 목화씨기름, 해바라기 기름, 잇꽃 기름 및 이들 혼합물로 구성된 그룹으로 부터 선택된 도출시스템.
- 제1항에 있어서, 소수성 지방물질이 모노글리세리이드, 디글리세라이드, 트리글리세라이드, 폴리글리세롤 에스테르, 솔비톨 에스테르 및 이들의 혼합물로 구성된 그룹으로부터 선택된 도출시스템.
- 제1항에 있어서, 소수성 왁스물질이 파라핀 왁스, 밀납, 카누바왁스, 캔돌릴라왁스, 라놀린, Spermaceti왁스, 쌀겨왁스, 미세 결정형왁스 및 이들의 혼합물로 구성된 그룹으로 부터 선택된 도출시스템.
- 풍미와 단맛을 증진시킬뿐만 아니라 향미료를 캡슐로 싸게 만들수 있는 향미 도출시스템을 제조하기 위해한 A) 지방, 왁스 또는 이들 혼합물을 용융시켜 이들을 타우마틴, 모넬린 또는 디하이드로칼콘의 이성화(denaturization)온도 보다 낮은 온도롤 유지시키고; B) 약 70-약90℃온도의 용융 혼합물에 타우마틴, 모넬린, 디하이드로칼콘 또는 이들의 혼합물을 부가하여 균일하게 혼합한뒤: C) B)의 용융 혼합물의 용융접 바다 낮은 온도를 갖는 분말화된 풍미 조성물의 유동화 공기 스트림을 준비하고; D) B)의 용융 혼합물을 분말화된 풍미 조성물의 유동화 스트림에 분사시켜 상기 분말형태의 풍미 조성을 위에 응결되어 캡슐로 만들어진 피복물을 입히는 단계로 구성된 방법.
- 제14항에 있어서, 용융 혼합물을 용융상태로 머물게 하지만 약 100℃미만의 온도에서 만드는 방법.
- 제14항에 있어서, 용융 혼합물의 캡슐화가 용융상태로 남아있지만 약 80℃미만의 온도에서 일어나는 방법.
- 제14항에 있어서, 용융 혼합물의 분무 속도가 약 15-20ml/분이고 분말 형태의 분무건조된 향미료의 유동화 공기 스트림의 온도가 약 70°-약 75℃인 방법.
- 제14항에 있어서, (A) 단계어서 준비된 균일한 용융 혼합물이 천연 또는 합성 왁스, 수소화되거나 혹은 부분적으로 수소화된 자방산, 모노글리세라이드, 디글리세라이드, 트리글리세라이드, 솔비톨 에스테르, 폴리 글리세롤 에스테르 및 이들 혼합물로 구성된 그룹으로부터 선택된 물질로 이루어진 방법.
- 제1항에 있어서, 껌 조성물에 함침된 도출시스템.
- 제1항에 있어서, 과자 조성물에 함침된 도출시스템.
- 제1항에 있어서, 제약 조성물에 함침된 도출시스템.
- 제1항에 있어서, 식료품에 함침된 도출시스템.
