Claims (18)
- 액상풀 형태의 지방 또는 2종 이상의 이의 지방 또는 오일의 혼합물을 기체 주입구 및 배출구 및 증류된 휘발물의 수거 장치가 장착된 배치식 장치에서 산소 존재하에 300∼475℃ 온도로 가열함을 특징으로 하는 향미 조성물의 제조방법.
- 제1항에 있어서, 산소가 기체 주입구로 들어가서 증류된 휘발물을 담지하고서 기체 배출구로 나가고 대기로 배출되기전 수거장치를 통과하는 방법.
- 제1항에 있어서, 수거장치는 콜드 트랩 또는 냉각기 및 냉수 트랩으로 설비되어 있고 기체 배출구에서 나온 기체가 대기로 배출되기 전 콜드 트랩 및 냉수 트랩을 통과하는 방법.
- 제1항에 있어서, 배치식 장치가 봄브 반응기인 방법.
- 제1항에 있어서, 처리시간이 1분∼6시간인 방법.
- 제1항에 있어서, 지방 또는 오일에 가하는 온도가 310∼400℃인 방법.
- 제1항에 있어서, 지방 또는 오일 100g당 10∼5000ml/분의 속도로 지방 또는 오일을 통과하는 공기에 의해 산소를 공급하는 방법.
- 제1항에 있어서, 수거된 휘발물을 시간별로 분획하여 다수의 다른 향미제를 제조하는 방법.
- 제1항에 있어서, 수거된 휘발물을 시간별로 분획하고 이중 2종 이상을 혼합하여 다수의 다른 향미제를 제조하는 방법.
- 제1항에 있어서, 휘발물과 함께 증류된 물을 휘발물 분획으로부터 분리하여 임의에 따라 혼합될 수 있는 제조하는 방법.
- 제3항에 있어서, 콜드 트랩을 통과하고 냉수 트랩으로 들어간 휘발물을 냉수 트랩에서 물과 함께 수거하여 향미제를 제조하는 방법.
- 제1항에 있어서, 제1항에 따르는 다른 방법에 의해 수득된 2종 이상의 분획을 혼합하여 향미제를 제조하는 방법.
- 제1항에 있어서, 제조된 향미 조성물을 담체와 혼합하는 방법.
- 제13항에 있어서, 향미 조성물 및 담체의 혼합물의 용액 또는 유탁액을 제조하고 분무 건조로 건조하는 방법.
- 제13항에 있어서, 향미 조성물의 현존량이 향미 조성물 및 담체의 총 중량을 기준하여 5∼30중량%인 방법.
- 제1항에 있어서, 제조된 향미 조성물을 그 자체로, 지방 중에 분산시키거나 또는 담체와의 혼합물로 음식물에 배합 또는 코팅하는 방법.
- 제1항에 따르는 방법에 의하여 제조되는 생성물.
