본 발명의 다른 목적과 이점을 수반하는 도면을 참조하여 취해진 본 발명의 바람직한 구체예의 다음의 상세한 설명으로 부터 명백해진다. 도면은 본 발명의 건조식품 제조장치의 일반적 배치도를 나타내는 개략도이다.

Claims (13)

  1. 감압조간하에서 마이크로파를 기름에 침지된 미가공 식품재료에 조사하는 것을 특징으로 하는 건조식품의 제조방법.
  2. 제1항에 있어서, 상기 기름의 온도가 약 70 내지 130℃인 것을 특징으로 하는 방법.
  3. 제1항 또는 제2항에 있어서, 상기 마이크로파의 출력이 약 1.35 내지 50kw인 것을 특징으로 하는 방법.
  4. 제1항 내지 제3항중 어느 하나에 있어서, 상기 감압 정도가 500 내지 15,000Pa 범위내에 있는 것을 특징으로 하는 방법.
  5. 제1항 내지 제4항중 어느 하나에 있어서, 미가공식품 재료가 종묘와 소견과, 콩, 어류와 패류, 동물의 육류, 조류와 고래, 야채, 과일, 버섯, 해초, 밀가루 가공식품, 콩의 가공식품, 계란의 가공식품, 우유의 가공식품, 가축의 육류 가공식품, 어류의 가공식품, 겔식품 및 쌀의 가공식품으로 구성되는 군으로부터 선택되는 하나 또는 그 이상인 것을 특징으로 하는 방법.
  6. 제1항 내지 제5항중 어느 하나에 있어서, 감압하에서 미가공 식품재료에 마이크로파 조사하는 과정이 상기 미가공 식품재료에 함유된 수분의 80 또는 그 이상의 중량%가 제거될 때까지 수행되는 것을 특징으로 하는 방법.
  7. 감압수단(12)을 갖는 감압실(1) 내에 비치된 기름탱크(4), 상기 기름탱크(4) 내의 기름에 침지된 미가공 식품재료를 수용하는 용기(5), 그리고 마이크로파를 기름내에 침지된 상기 미가공 식품재료에 조사하는 마이크로파 조사수단(9)으로 구성되는 것을 특징으로 하는 건조식품의 제조장치.
  8. 제7항에 있어서, 상기 감압수단(12)이 흡입펌프(13), 냉장고(14), 그리고 감압 제어밸브(15)로 구성되는 것을 특징으로 하는 장치.
  9. 제7항 또는 내지 제8항에 있어서, 상기 기름탱크(4)가 회전 가능하고 수직이동 가능한 테이블(6)을 갖추고 있는 것을 특징으로 하는 장치.
  10. 제7항 또는 내지 제9항에 있어서, 상기 기름탱크(4)가 증기 쟈켓(8)을 갖추고 있는 것을 특징으로 하는 장치.
  11. 제7항 내지 제10항에 있어서, 상기 기름탱크(4)가 증기 송달관(8a)를 갖추고 있는 것을 특징으로 하는 장치.
  12. 제7항 내지 제11항에 있어서, 상기 마이크로파 조사수단(9)이 복수의 마이크로파 조사입구(19)를 갖추고 있는 것을 특징으로 하는 장치.
  13. 제7항 내지 제12항중 어느 하나에 있어서, 상기 복수의 마이크로파 조사입구(19)가 상호 대칭위치에 배치되어 있는 것을 특징으로 하는 장치.
