Claims (15)
- 단백질 가수분해물의 마그네슘 함량을 조절함을 특징으로 하는 단백질 가수분해물의 점도 조절 방법.
- 제1항에 있어서, 단백질 가수분해물의 칼슘함량도 조절하는 방법.
- 제1항에 있어서, 단백질 가수분해물의 마그네슘 함량을 감소시킴으로써 점도를 감소시키는 방법.
- 제2항에 있어서, 단백질 가수분해물의 칼슘함량을 감소시킴으로써 점도를 감소시키는 방법
- 제1항에 있어서, 단백질 가수분해물의 마그네슘 함량을 증가시킴으로써 점도를 증가시키는 방법.
- 제2항에 있어서, 단백질 가수분해물의 칼슘함량을 증가시킴으로써 점도를 증가시키는 방법.
- (a) 가수분해물의 피로포스페이트를 가하여 불용성 마그네슘 및/또는 칼슘 피로포스페이트 염을 형성하고, (b) 불용성 염을 제거함을 특징으로 하는 단백질 가수분해물의 점도 감소 방법.
- 제7항에 있어서, 피로포스페이트가 알칼리 금속 또는 암모늄 피로포스페이트염인 방법.
- 제7항에 있어서, 피로포스페이트가 테트라소듐 피로포스페이트, 테트라포타슘 피로포스페이트 또는 테트라암모늄 피로포스페이트인 방법.
- 제7항에 있어서, 단백질 가수분해물이 산, 알칼리 또는 효소가수분해 또는 그의 배합 방법에 의해 수득된 식물성 또는 동물성 단백질 가수분해물인 방법.
- (a) 단백질 가수분해물의 pH를 7.0이상으로 조절하고, (b) 카르보네이트, 실리케이트, 오르토포스페이트 또는 그의 배합물의 군에서 선택된 염을 가하여 불용성 마그네슘 및/또는 칼슘염을 형성하고, (c) 불용성 염을 제거함을 특징으로 하는 단백질 가수분해물의 점도 감소 방법.
- 가수분해물에 마그네슘 및/또는 칼슘원을 가함을 특징으로 하는 단백질 가수분해물의 점도 증가 방법.
- 제12항에 있어서, 마그네슘 및/또는 칼슘원이 마그네슘 및/또는 칼슘의 가용성 염인 방법.
- 제12항에 있어서, 마그네슘 및/또는 칼슘원이 높은 마그네슘 및/또는 칼슘 함량을 갖는 단백질 물질인 방법.
