Claims (11)
- 발효숙성 노니, 코코넛 슈가 및 주정 미함유 발효 식초를 포함하는 발효 노니 식초.
- 제1항에 있어서,
상기 발효 노니 식초는, 발효숙성 노니 30 내지 40 중량%, 코코넛 슈가 5 내지 10 중량% 및 상기 주정 미함유 발효 식초 50 내지 60 중량%를 포함하는 것을 특징으로 하는 발효 노니 식초. - 제1항에 있어서,
상기 주정 미함유 발효 식초는 과일 식초, 현미 식초 및 막걸리 식초로 이루어진 군에서 선택되는 1종 이상의 형태인 것을 특징으로 하는 발효 노니 식초. - 제1항에 있어서,
상기 발효 노니 식초는 액상청 또는 고농축청(syrup)의 형태인 것을 특징으로 하는 발효 노니 식초. - (S1) 유산균을 이용하여 발효한 발효숙성 노니 및 코코넛 슈가를 혼합하여 숙성시키는 단계;
(S2) 상기 (S1) 단계에서 숙성된 혼합물을 착즙하여 농축시키는 단계;
(S3) 상기 (S2) 단계에서 얻은 농축물에 주정 미함유 발효 식초를 혼합하는 단계;를 포함하는, 발효 노니 식초의 제조방법. - 제5항에 있어서,
상기 발효숙성 노니는 노니 열매에 유산균을 접종하여 발효 및 숙성시켜 제조된 것을 특징으로 하는 발효 노니 식초의 제조방법. - 제5항에 있어서,
상기 유산균은 하기 7종의 유산균을 포함하는 복합 유산균인 것을 특징으로 하는, 발효 노니 식초의 제조방법:
(1) 락토바실러스 플란타럼 KCCM11821P (Lactobacillus plantarum);
(2) 비피도박테리움 락티스 (Bifidobacterium lactis);
(3) 락토바실러스 람노수스 (Lactobacillus rhamnosus);
(4) 락토바실러스 카제이 (Lactobacillus casei);
(5) 락토바실러스 퍼멘텀 (Lactobacillus fermentum);
(6) 비피도박테리움 브레브 (Bifidobacterium breve); 및
(7) 락토코커스 락티스 서브스피셔스 락티스 (Lactococcus lactis subsp. lactis). - 제5항에 있어서,
상기 코코넛 슈가는 코코넛 꽃대의 즙을 농축시켜 제조된 것을 특징으로 하는 발효 노니 식초의 제조방법. - 제5항에 있어서,
상기 발효숙성 노니와 코코넛 슈가의 혼합물은 청(syrup) 형태인 것을 특징으로 하는 발효 노니 식초의 제조방법. - 제5항에 있어서,
상기 숙성은 60일 내지 100일 동안 실시되는 것을 특징으로 하는 발효 노니 식초의 제조방법. - 제1항 내지 제4항 중 어느 한 항의 발효 노니 식초를 포함하는 식초 음료.
