- (a) 안정화된 산성화 완충 단백질 성분을 제공하는 단계; 및(b) 구연산 말레산 칼슘과 하나 또는 둘 이상의 미량 광물질들을 포함하는 나머지 식품 제품 성분들을 상기 안정화된 산성화 완충 단백질 성분과 혼합하여 칼슘, 비타민 D 및 미량 광물질 강화 식품 제품을 형성하되, 상기 구연산 말레산 칼슘은 상기 식품 제품의 적어도 0.18 중량%의 용해된 칼슘 수준과 상기 제품의 적어도 0.7 중량%의 전체 산 수준을 제공하는 양이며, 비타민 D는 RDA의 적어도 10% 이상에 해당하는 양이며, 상기 하나 또는 둘 이상의 미량 광물질들은 제공되는 각 미량 광물질의 RDA의 적어도 10% 이상을 제공하는 양인 것을 특징으로 하는 방법.
- 제22항에 있어서, 상기 단계 (a)의 안정화된 산성화 완충 단백질 성분은 검 안정화제와 완충 단백질 성분을 포함하는 용액을 고전단 혼합 조건하에 약 60°F 미만의 온도에서 산성화함으로써 형성되는 것을 특징으로 하는 방법.
- 제22항에 있어서, 상기 용액은 구연산으로 산성화되는 것을 특징으로 하는 방법.
- 제22항에 있어서, 상기 검 안정화제는 50% 이상의 메톡시화 정도(degree of methoxylation)를 가진 높은 메톡시 펙틴과 카르복시메틸셀룰로오스의 혼합물을 상기 (b) 단계의 식품 제품의 0.1 ~ 1 중량%의 양으로 포함하는 것을 특징으로 하는 방법.
- 제22항에 있어서, 상기 (a) 단계의 안정화된 산성화 완충 단백질 성분은 0.8 마이크론 미만의 입자 크기를 가진 단백질 및 안정화제 입자를 포함하는 것을 특징으로 하는 방법.
- 제22항에 있어서, 상기 (a) 단계의 안정화된 산성화 완충 단백질 성분은 0.2 ~ 0.6 마이크론 범위의 입자 크기를 가진 단백질 및 안정화제 입자를 포함하는 것을 특징으로 하는 방법.
- 제22항에 있어서, 상기 (a) 단계의 안정화된 산성화 완충 단백질 성분은 상기 (b) 단계의 상기 식품 제품의 0.1 ~ 5 중량%의 양에 해당하는 유제품 단백질, 콩 단백질 또는 이들의 혼합물로부터 형성되는 것을 특징으로 하는 방법.
