Abstract
본 발명에 따른 양배추즙 제조방법은 양배추, 생강을 분쇄하여 분쇄물을 제조하는 제 1단계; 상기 분쇄물에 감초 추출물, 진피 추출물, 오렌지 추출물, 페퍼민트 추출물, 로즈마리 추출물을 혼합하여 혼합물을 제조하는 제 2단계; 상기 혼합물에 효소를 첨가한 후 교반하면서 가열하여 효소화 반응을 일으키는 제 3단계; 상기 효소화 반응이 일어난 혼합물을 초음파 처리하여 추출물을 제조하는 제 4단계; 상기 추출물을 1차 여과하는 제 5단계; 상기 1차 여과한 추출물을 2차 여과하는 제 6단계; 상기 2차 여과한 추출물을 살균하는 제 7단계;를 포함하되, 상기 제 2단계에서 혼합물 제조 시 분쇄물 1중량부에 대하여 감초 추출물 0.03중량부, 진피 추출물 0.05중량부, 오렌지 추출물 0.3중량부, 페퍼민트 추출물 0.01중량부, 로즈마리 추출물 0.01중량부를 혼합하는 것을 특징으로 한다.

Claims (4)
- 양배추, 생강을 분쇄하여 분쇄물을 제조하는 제 1단계;
상기 분쇄물에 감초 추출물, 진피 추출물, 오렌지 추출물, 페퍼민트 추출물, 로즈마리 추출물을 혼합하여 혼합물을 제조하는 제 2단계;
상기 혼합물에 효소를 첨가한 후 교반하면서 가열하여 효소화 반응을 일으키는 제 3단계;
상기 효소화 반응이 일어난 혼합물을 초음파 처리하여 추출물을 제조하는 제 4단계;
상기 추출물을 40~60 mesh size의 스크린메쉬를 이용하여 1차 여과하는 제 5단계;
상기 1차 여과한 추출물을 2차 여과하는 제 6단계;
상기 2차 여과한 추출물을 90℃에서 30초간 살균하는 제 7단계;를 포함하되,
상기 제 2단계에서 혼합물 제조 시 분쇄물 1중량부에 대하여 감초 추출물 0.03중량부, 진피 추출물 0.05중량부, 오렌지 추출물 0.3중량부, 페퍼민트 추출물 0.01중량부, 로즈마리 추출물 0.01중량부를 혼합하고,
상기 제 1단계에서 분쇄물 제조 시 양배추 1중량부에 대하여 생강 0.01중량부를 혼합하여 분쇄하고,
상기 제 3단계에서 교반은 50 내지 80rpm으로 교반하며, 가열 온도는 40 내지 50℃이고, 효소화 반응은 2 내지 4시간 동안 수행되며,
상기 제 3단계에서 효소는 pectinase, cellulase 중 적어도 어느 하나이며,
상기 효소의 첨가량은 상기 양배추 1중량부에 대하여 0.002 내지 0.005중량부인 것을 특징으로 하는 양배추즙 제조방법 - 삭제
