Abstract
본 발명의 발효소금의 제조방법은 편백추출물과 미생물배양액을 혼합하는 혼합단계와, 혼합단계에서 수득한 혼합물을 20 내지 40℃에서 발효시키는 발효단계와, 발효단계에서 수득한 발효액에 천일염을 녹여서 수득한 발효염수를 숙성시키는 숙성단계와, 발효염수를 끓여서 소금결정을 형성시키는 결정화단계와, 소금결정에 열을 가해 볶는 볶음단계를 구비한다.

Claims (6)
- 편백추출물 100중량부에 대하여 미생물배양액 20 내지 50중량부와, 양파껍질 추출물 10 내지 30중량부를 혼합하는 혼합단계와;
상기 혼합단계에서 수득한 혼합물을 20 내지 40℃에서 발효시키는 발효단계와;
상기 발효단계에서 수득한 발효액 100중량부에 대하여 천일염 20 내지 60중량부를 녹여서 수득한 발효염수를 숙성시키는 숙성단계와;
상기 발효염수를 끓여서 수분을 증발시켜 소금결정을 형성시키는 결정화단계와;
상기 소금결정에 열을 가해 볶는 볶음단계;를 구비하고,
상기 숙성단계는 상기 발효염수 100중량부에 대하여 숯 분말 10 내지 20중량부 및 황토 분말 10 내지 20중량부를 첨가하여 숙성시키는 것을 특징으로 하는 발효소금의 제조방법. - 삭제
