Abstract
또한, 팽화미를 당화시키기에 알맞은 당화력에 맞춰 적어도 2종류의 누룩 및 조효소제를 제공함으로써 막걸리의 풍미를 증진시키고 오미를 충족시키는 술을 빚을 수 있어, 다양한 맛과 향을 느낄 수 있다는 효과가 있다.
또한, 본 발명인 막걸리 키트를 이용하여 제조된 막걸리는 적어도 10도의 알코올 함량을 지니므로 일반 막걸리보다 높아 진한 술을 즐길 수 있고, 이를 다양한 음료와 희석하여 다양한 막걸리 칵테일을 즐길 수 있다는 효과가 있다.

도 2는 본 발명의 일실시예에 따른 막걸리 키트로 제조한 막걸리의 관능평가 결과를 나타낸 그래프.
Claims (3)
- 팽화미 100 중량부에 대하여, 당화제 8~12 중량부, 효모 0.3~0.5 중량부를 준비하는 단계;
상기 당화제 및 효모를 혼합하여 당화 혼합물을 제조하는 단계;
상기 팽화미 및 당화 혼합물을 각각 폴리에틸렌 내포장지에 담아 열접착으로 밀봉하여 각각의 내포장물을 형성하는 단계;
상기 각각의 내포장물을 박스에 담아 포장하는 단계; 를 포함하고,
상기 당화제는 팽화미 1 g에 대하여, 전통누룩 18~24 SP, 개량누룩 11~17 SP, 조효소제 18~24 SP를 포함하여, 당화력이 47~65 SP이며,
상기 당화력은 일반적으로 당화력이 360~420 SP인 전통누룩과 1200~1500 SP인 개량누룩과 600~800 SP인 조효소제를 각각 상기 팽화미 1 g에 대하여, 전통누룩 18~24 SP, 개량누룩 11~17 SP, 조효소제 18~24 SP로 맞추기 위하여, 상기 당화제 8~12 중량부는 전통누룩 5~6 중량부, 개량누룩 1~2 중량부, 조효소제 2.5~3.5 중량부로 이루어지는 것을 특징으로 하는 막걸리 키트의 제조방법.
